Shepherds Pie Recipe
There are not many things in this life that have great rewards with very little expenditure of time and energy, but Shepherds Pie is one of them. It’s a very easy casserole to prepare, and I don’t know anyone who hasn’t loved this recipe.
Ingredients
•2 pounds of potatoes
•1 cup sour cream
•1 medium onion, chopped
•1 1/2 cups diced carrots
•1 1/2 lbs. ground beef
•1 1/2 tsp. Teriyaki sauce
•1/2 of a small Jalapeno pepper, chopped. Remove seeds.
•4 tbs. unsalted butter
•2 tbs. flat leaf parsley, washed and finely chopped
•1 5/8 tsp. salt
•1/2 tsp. brown sugar.
•2 cloves of garlic

Organize
Take out a small bowl to contain your carrots and onions after chopping. Peel your potatoes, carrots, jalapeno pepper, and onion, and get them chopped. Chop your parsley and put it aside in a separate container. Put the cubed potatoes directly in the salted water to boil. Preheat oven to 400°F.

Potatoes
You want to immerse the potatoes into the pan with just enough water to cover them. Salt the water with 1 1/2 tsp. salt. Add diced potato cubes of about an inch each. Boil gently for 8-10 minutes. Poke a cube with a fork. If it goes all the way through easily and even breaks apart a bit, they’re ready to drain. Mash with a potato masher. Add sour cream and chopped parsley. Whip until smooth and creamy.

Beef and Vegetables
Add butter to sauté pan. Melt on low heat and add carrots, jalapeno pepper, onion, brown sugar and 1/8 tsp. of salt. Press garlic through a press into the pan. Once the mixture is coated in butter, turn up the heat not quite to medium and sauté until the carrots begin to tenderize 8-10 minutes. Now add your ground beef and Teriyaki sauce, breaking the beef apart and mixing it with the vegetables. When it’s completely broken up, continue cooking another 3-4 minutes. Some of the beef should be slightly pink.

Some of the beef should be slightly pink.
Line an 8 x 13 casserole dish with the mixture. Spread mashed potatoes over the top. If you want to be fancy, you can put the cooled potatoes through a pastry bag to make swirls and peaks which will brown nicely and look pretty. Bake for 40 minutes.Serves 4. Cooking and prep time before baking is about 30 minutes
